I’m keeping all my receipts for general sales tax, what are the stipulations if tax is from another state or from Canada? (Cap at 10k I know, we have no income tax in FL)

Do online/Amazon purchases with tax count? Does gasoline count?

Yes, online purchases count. Anything you pay sales tax on would count towards the sales tax deduction whether you pay it online or in person.
