What is the definition of performing a service if I was in a research study and received a 1099-misc?

I participated in a research study, filled out some questions, kept diary, and went in for some bloodwork and scans. Does that count as performing a service for the payment?

Generally no.  This would not be considered self-employment income, and subject to SE taxes if this was a one time study and not your primary source of income.
