Multiple types of self employment

In a normal year, I have multiple types of self employment income: an etsy shop, sometimes I do art fairs, private contract work as a stage hand and then also figure modeling for art co-ops and schools. Should I separate these into different self employed categories (like art sales, theatre work, and modeling) when I calculate my expenses or can I umbrella it all together under one "buisness" that is me and all that I do? I don't have an LLC yet and I made less than a 1000 from each last year. As I grow will I have to change how I do taxes? In the past I rolled it all together since the lines are so blurred that it seemed the easiest but I'm not sure I'm doing it the "right" way. (fyi I also have W2 income.)

oh and I also teach ESL online as a private contractor for a company based in China so that adds another layer of confusion to the mix for me.
