If I re-characterized a Roth IRA contribution to a Traditional contribution, does the interest earned prior to the re-characterization count as part of my contribution?

No.  The interest that accompanied the movement of the Roth IRA contribution to the traditional IRA simply changes to being earnings in the traditional IRA instead of earnings in the Roth IRA, as if the contribution had been made originally to the traditional IRA.  When TurboTax asks for the amount recharacterized, that refers to the amount of the contribution moved, not including the attributable earnings moved.
