I want to keep my social security number hidden from the Payees on a 1099 NEC form?

But I am doing business under my social security number and am not an LLC or Inc. Won't that be confusing to the IRS when I file under a schedule C on my personal taxes? Also, since I have to have the 1099 nec forms out by January 31, is it too late to get an EIN number?
Finally, I live in NJ but my all my sales people who receive commissions from me reside in Connecticut. The other 1099 nec recipient from me lives in NJ. Do I have to file a 1099 NEC form to the state of NJ division of taxes as well as the IRS?
