TurboTax consistently asks for information about K-1s that my investment companies do not include on their K-1s. Shouldn't TT let investment firms know what is needed?

Not necessarily.  TurboTax will prompt you for more information depending upon your answers to questions when you start your tax return.  When you prepare your tax return yourself, you will see these prompts asking for more information if you answer a question that might indicate you should have another form.

Also, investment firms will typically have a page dedicated to tax forms when you log into your account on the brokerage side if anything additional is included with your investments that needs to reported on your tax return.
