If I pay rent at a salon to basically just use the building and chair they provide but I buy all my own products supplies and equipment, would I be self employ or smbusi?

Both.  You are a self-employed small business owner.  If you need to choose on or the other, choose self-employed.  You will file your income and expenses on Schedule C as a part of your personal tax return.
