I am a full time independent student working a full time job. I pay for my own expenses such as utilities, rent, insurance, etc. How would this affect my taxes and FAFSA?

WoW you ask a lot!  The impact on your taxes is that you will be taxed on your income, just like any other person with income.  You may be eligible for education credits or deductions.  Refer to Tax Benefits for Education https://www.irs.gov/pub/irs-pdf/p970.pdf  and other Education related Q&A  https://www.irs.gov/credits-deductions/individuals/education-credits-questions-and-answers

The impact on FAFSA is difficult to predict without specifics.  FAFSA is a complicated form and process.  You may consider yourself independent, but FAFSA may not, and may require income data from your parents.  (Although you can request an exemption from this.)  Often the determination of independence depends upon your age, and other factors.  The only way I know to determine the impact is to complete a FAFSA form on "trial" basis using actual 2018 data and estimates of the data for 2019.  Then compare the results.
