If my student loans are in deferment, and have not had to pay interest; do I still claim them on my tax returns?

No.  Only student loan interest paid is deductible.  So, if you have not paid any interest (you would have received a 1098-E form or a summary statement in your account showing interest paid), then there is nothing for you to deduct or claim on your tax returns.
