What if a person drives 90 miles to a larger city to do an Uber or DoorDash? Do they deduct the 90 miles each direction? Or only from where they pick up the person or delivery and back to that place?

If the mileage is incurred for traveling to a rider or as part of your work, then it would be considered business mileage. Please see this link for more information.
No, I've seen several people that are a driving an hour or more away (100 miles) to do Door Dash in another community and deducting those miles. The trip is not booked. They drive to the other community, sign-in, and get gigs there.
