TurboTax doesn't access any of the data that you enter into the system without you calling in and asking someone to access it in order to help you.

That being said all of the data that you enter into the TurboTax system is stored in the system.  Once your return is filed there is no way to remove the data from storage on the TurboTax servers.  So if that is not something that you want to do then using an online tax preparation software may not be the best way for you to go.  You can download forms directly from the IRS website and fill them out by hand.

You do not have direct access to the forms with online TurboTax.   Forms mode is a feature of the desktop download software.   If you want direct access to forms, you want desktop software.  However, even with desktop you need to be careful because entering everything directly to the forms or overriding the interview screens could cause you to void the accuracy guarantee.
