If you did not keep track of your self-employed business expenses while you were making deliveries for DoorDash, then you cannot claim any expenses on your Schedule C. You will only be reporting your income so it will all be subject to self-employment tax and income tax.
If you have business expenses, you are required to have records showing these expenses to justify that they were ordinary and necessary as part of your business. If you do not have the records or cannot get a copy of records (such as a credit card receipt), then you are not allowed to claim the expense. There is no safe harbor amount that you can claim.
