If my federal and state returns were filed electronically, the signature and date fields are blank when I print them to attach to my amended returns. In addition to signing the amended returns, do I also need to sign and date the original returns or do I leave them blank.
Play it on the safe side and sign and date the returns and attach them to the amended returns. Those original returns contain the new stuff from your amendment.
This was my question also. BUT, when dating the 1040 signature, is it the date the original was filed or the date the amended form is filed?

No.
The IRS instructions for Form 1040X do not require you to submit your original Form 1040. The only items they ask for are supporting copies of source documents that reflect a change on the tax return that you originally filed and resulted in the 1040X. For example, a new W-2 form or a corrected W-2 Form. You would also include copies of any forms that changed, like a new Schedule C if you updated your Self-Employment activity.
