My wife received unemployment in Texas. I’m active duty military. Would we be able to get a larger return if I file an amended return?

Would I be able to get a larger return because this affected my gross income?

you could actually owe if the UC was not included on your return. in most cases this would only occur if the UC was more than $10,200.

If your unemployment was not included in your original return, then you should amend it and include it.  As @Mike9241 mentions, there is a possibility that you could owe some tax, but it's more likely that you will get money back, especially if you had taxes withheld from the unemployment income.
