If I never turned in the amend that I printed, does the IRS see that I changed things in TurboTax. I’m afraid I made a mistake on the amend and don’t want to submit it.

the IRS would probably need a subpoena to see what Turbotax has because it has no direct access and even then they couldn't do anything because you have not submitted it.
