I'd like to add extra documentation for medical expenses to my tax return.

My medical expenses are high. In order to minimize a chance of being audited, I'd like to include documentation for all medical expenses along with an explanation letter to the return. 1) Is it a good idea? 2) Is it possible to add extra pages to the return when filing electronically with desktop version of TurboTax?

There is no need to add any documentation to your tax return for your medical expenses.  For one you cannot e-file a tax return if you are going to add additional forms or documents not already included in the tax preparation software.  It would have to be printed and mailed.  Second no one at the IRS would read the additional documents that were included with the return.

Keep any supporting information for your medical deductions available in case the IRS every questioned the medical deductions in the future.
