You will need to enter the amount on the letter and if you absolutely did not receive the stimulus, you will need to contact the IRS at 800-829-1040 to trace the payment and possibly reissue it. If you enter an amount different than what the IRS records show, they will adjust your refund to reduce it for the stimulus they already issued.
