How do I find out if my return was processed and approved?

If accepted by the IRS use the federal tax refund website to check the refund status - https://www.irs.gov/refunds

I know that I've received both the state and federal returns, but does this mean that my 1040 form was processed? Because I need to amend it by filing a 1040-X, and cannot until the 1040 is processed.

If you have received both the federal and state tax refunds the your tax return have completed processing since the refunds were approved and issued.
