(How) Can I amend my return to include my e-mail? I noticed that when filling the return with turbotax, the e-mail was not included in the 1040 form. Can I amend this?

I filled my return back in January 30th. It's currently March 12th and I have not received the federal return yet. I live in Canada and my phone is a Canada number, so I am concerned that I should have received a request for new information, but haven't because my e-mail is not in the 1040 form. Can I amend the form and include my e-mail?

Do not amend to include an email address. The IRS will not contact you by email, so I am not sure why they even ask for that information. If the IRS needs additional information, they will send you mail.

Receiving email from the IRS - We will never initiate contact with you by email or require you to communicate with us by email.

Once your return is filed, TurboTax has no control over the processing of your return or the release of your refund.

Here are a couple FAQs to track your refund:
When will I get my federal tax refund?
How do I track my state refund?
Why does Where's My Refund say "approved" but TurboTax still says "accepted"?
