Do I need to file taxes if I've worked as a contract laborer for only the last two months of this year (2017)?

I've only worked two gigs as a contract laborer for the last two months of this year (2017), and have made over the $400 minimum income requirement. But I'd like to confirm that I'm still not required to file since I haven't worked the whole year as a contract laborer.

Yes you must file a Sch C  even if you only worked 1 day as a self employed person since you made more than $400.   If you made less than that you still must report it on the form 1040 line 21.
