Does TurboTax Forms Mode support adding forms that aren't supported by TurboTax?

Let's say I want to include some unsupported forms. Would I be able to add those forms in Forms Mode? I understand I won't be able to efile, but I also don't want to separately download those forms and manually stitch PDF files together.

no. IRS forms and schedules have a sequence number so putting a manual form in the proper place should be easy. you are correct you can not e-file. since numbers on that form would likely need to be carried to other (TurboTax prepared) forms or schedules, Turbotax's accuracy guarantee would be void due to the overrides.

If a form is not supported, you won't be able to open it in Forms Mode.

It's too late now to e-File anyway.

If you know how to fill out the form, then you can override the corresponding lines on

1040 or schedules 1-3.

The accuracy guarantee is meaningless.
