You are correct that when you allocated your North Carolina income amounts in your Part-Year NC interview, they should stay that way.
If you're using TurboTax Online, try closing the program, clear your Cache and Cookies and re-visit the North Carolina interview.
If this doesn't resolve your issue, you could try Deleting North Carolina and then adding it and stepping through the interview again.
