The IRS has not said yet how it will deal with missing stimulus payments. If you did not file your 2020 return yet, then the IRS will use 2019 information for your third stimulus payment. The baby would not be included in the payment because the IRS will not know you had a baby until you file your 2020 tax return.
You will get the payment for your baby eventually.
You should file quickly. The American Rescue Plan of 2021 includes a $3,600 payment for children under 6 years old that may be paid out as early as this summer.
