Claim the amounts that you can prove and are entitled to claim. Keep great records because those scholarships and tuition get messier through the 4 years. You need to keep track of the 1098-T, what you actually paid, and what you actually claimed through the years.

When the IRS asks for proof, you send the bursar account records, your checks, etc. You need those items to match your claim.
