"So Turbo Tax is filling out Form 8889 incorrectly, marking each HSA as family plans."
No, TurboTax is doing it correctly. This is because the IRS states that if one spouse is covered by a Family HDHP plan, then both spouses must be treated as covered by a Family plan.
That is, even though you have a Self-only HDHP plan, you cannot treat your contributions as separate from your spouse's - you share that $7,100 annual HSA contribution limit.
