Can my 2016 tax form be amended to include interest on bonds that matured in 8/16 but I didn't know was required to be reported before redemption?

I didn't know you had to report interest on EE bonds at maturity date. My bonds matured in 2016 and I didn't report the interest on 2016 filed tax form. Can the form be amended to report the interest and adjust the payment needed to prevent a penalty.
