For most people, you will only need to sign the 1040X for federal and the 540X for California (look for the signature lines).
Certain other forms, like form 8332, Release/Revocation of Release of Claim to Exemption, and form 2848, Power of Attorney, also need to be signed, but these are not common.
Any form that requires a signature will be clearly marked with a signature line.
