I know the 2017 forms aren't out yet, but can I create a "fake" 2017 return using 2016 forms to get an idea of what me refund will be?

You can purchase a CD or Download of the 2017 desktop editions from this website - <a rel="nofollow" target="_blank" href="https://turbotax.intuit.com/personal-taxes/cd-download/">https://turbotax.intuit.com/personal-taxes/...>

No. The online versions of TurboTax (TT) cannot be used for fake returns. Anything you enter will mess up your 2016 return.
However with the download / CD versions of TT, you can do multiple returns, including fake ones. You may want to consider switching to down load for future years.
