1099 employee write offs

Hello,

I am a legal process server in the state of WA.  I am not really sure exactly what I am allowed to write off for my taxes and/or if I have to pay quarterly taxes or just wait until the end of tax season to write off items and go from there.

Please HELP,

Thank you,
