Do I need to do anything special to cash in (sell) EE and I Savings Bonds now for next years' INTfiling???

You can only earn the interest income specified by the Series EE Bond.

You should therefore wait until the bond(s) reach their maturity date /face value before you cash them, if possible. to receive your maximum interest income.
