Why is turbo tax having me do my 2019 returns and not my 2020??

Because tax year 2020 does not end until after 12/31/2020.   A 2020 tax return will be filed during calendar year 2021.

Tax year 2019 is the current tax year being reported.

You won't do your 2020 return until the year 2020 is over.  The 2020 program won't open until Nov or Dec.

Current returns are only for the year that ended December 31, 2019.  The year goes by the year you are filing for, not the year you are preparing them in.

you  can't do a 2020 return until you have in your hands a 2020 W-2.
