Trying to file my 2020 taxes and the online tool keeps assuming 2021. How do I file 2020?

You must download the 2020 version. Unfortunately you can no longer e-file for 2020 so u will have to print and  paper file them after you do that.

To file a 2020 tax return, you'll need to purchase and download the TurboTax software for PC or Mac as TurboTax Online and the mobile app are only available for the current tax year.

After installing the software, open it and follow the onscreen instructions.

Prior year returns must be paper-filed, as e-filing is no longer available. TurboTax will walk you through that process when you get to the File section in the software.
