When I submit my information for this it calculates to $1717.65 for Sales Tax and $3202.00 for State and Local Tax Deduction, but no matter what option I choose it always select $1717.65 and I can’t override it. What do I do?

I think you mean you want to use the state and local tax deduction since it is higher than the sales tax deduction, but TurboTax gives you the sales tax deduction. You should go back and edit your sales tax entries and on the screen that says Places you lived, delete the state referenced there. You don't need to enter the sales tax since you are deducting the state and local tax.
Also, on the screen in that section that says Let's find your biggest deduction, make sure you check the entry for State and Local tax deduction.
I did select the State and Local Tax Deduction but it did not change anything.
When I delete my state then it comes up at $0

You state that the state and local tax deduction is larger than your sales tax. You have to choose between them so you want the larger deduction. When you delete the sales tax section, you should be left with the state and local tax - which includes taxes paid from your salaries, property tax, and so on. The sales tax being zero is fine since it is the lower of the values. Unless you are saying the state and local taxes went to zero. They come from w2's and other entries so it should not go to zero.
You can also do a quick manual check. Look at your w2's, combine state and local taxes paid, add any real estate and property tax, any estimated taxes or balance due paid in 2025. This is your correct state and local tax.
A last resort to get rid of the sales tax:
A full or corrupted cache can cause problems in TurboTax, sometimes you need to clear your cache (that is, remove these temporary files).
