My spouse is disabled and receiving money from her former employer's disability, longterm insurance policy. Under "employment" do I list her previous job or what?

If you mean Occupation in the Personal Info section, you could enter disabled or retired. It doesn't make much difference what you enter, because it's used by the IRS for statistical purposes, and by TurboTax to suggest possible deductions.
