My husband & I are both independent consultants with our own businesses but we help each other at times. Do we need to count each other in each others' business?

For example do I include my husband as a spouse type assistant/employee and vice versa?

No, there wouldn't be much point in doing that since you would have to 1099 each other for the income you paid each other.
