My 2016 refund was applied to my 2017 estimated taxes. Where does this get documented on my 2017 return?

If you used TurboTax in 2016, and transferred your information over to 2017, you should see this in Deductions and Credits, under Other Income Taxes.

If this hasn't been transferred, you can add this by starting 2016 refund applied to 2017 federal taxes. See the screenshots below.
