If we only had social security as our income in 2021, do we need to file taxes?

No. You will be required to file a tax return.

If your ONLY income for 2021 was Social Security you are not required to file a tax return unless you had health insurance from the "marketplace" and receive a 1095A. And....did you receive the 3rd EIP payments of $1400? If you did not receive the stimulus payments you can file a 2021 return to seek the 3rd stimulus payments.
