First tell her that it is easy to amend and that if she does she will be getting more money back.  If she doesn't want to amend then amend yours and claim the deduction.

Why does she have to re-do her return?  Did she not claim you?  Maybe you don't qualify as her dependent anymore.  Maybe you have to re-do yours.  How old are you?  Are you a full time student?  And how much did you make?

She did claim me, I'm only 21, I'm not a full time student, and I made almost 19,000.

WAIT A MINUTE,  she did claim you?  You are over 18 and made too much for her to claim you.  So yes she will have to amend her return and take you off.

Then on your return.  If you said she will claim you then you can also amend your return to claim yourself.  Wait for your return to fully process and you get the first refund or pay the tax due.  Then you can amend yours.  The amended return won't be ready until Feb 9.  It has to be printed and mailed and will take them like 16 weeks to mail a check for the refund.
