I am not legally married with my partner and we purchased a home, how should we file taxes and interest paid in 2018, if we are not doing our taxes together?

You only enter on your 2018 tax return the amount of interest you actually paid. For example, if you paid half the mortgage payment each month then you can deduct half the mortgage interest.
