I am a US citizen. I will be moving out of the US and will not be working for a few years. Do I still need to file my tax return if my only income is interet income from my bank which is only around $1000-1200/year?

How are you going to support yourself for a few years on only $1,200 a year? Is there a U.S. taxpayer who would be able to claim you as a dependent? (It doesn't matter whether they actually claim you. What matters is whether they could claim you.)
If no one could claim you as a dependent, and your total income is less than about $13,000, you would not be required to file a tax return unless your filing status is married filing separately, or you received advance premium tax credit for health insurance from the Marketplace ("Obamacare"), or you took money out of a Health Savings Account (HSA) or Medical Savings Account (MSA). The threshold of approximately $13,000 is adjusted for inflation each year, but based on what you said you don't have to worry about the exact amount. It is higher if your filing status is anything other than single.
If someone could claim you as a dependent, whether or not they do claim you, you would be required to file a tax return if your unearned income is more than $1,250. Interest income is unearned income. The $1,250 threshold is for 2023. It's adjusted for inflation each year, but you are obviously close to the cutoff, so you would have to check each year. Even if your unearned income is less than the threshold, you would still have to file a tax return if you received advance premium tax credit for health insurance from the Marketplace ("Obamacare"), or you took money out of a Health Savings Account (HSA) or Medical Savings Account (MSA).
Thank you for your reply. Due to medical reasons, I will be living with my parents in their home. I won't have any expenses and will probably use a little bit of savings I have. They can't claim me. They're not US citizens. Thank you very much
