How can I figure out what my wife’s adjusted gross income is if she doesn’t have a 1040?

If you and she filed a joint return for 2024, the AGI on your joint Form 1040 on line 11 is the same for both of you.    If she did not file a 2024 tax return, her AGI for 2024 is zero.

If you filed your 2024 federal tax return as Married Filing Jointly, then the 2024 AGI is the same for the both of you, Form 1040 Line 11
