Just bought my first house this year, and have my fiancee, her two children, and our one year old all living with me. Even with not being married should I still claim head of household and claim all of them?

You can have Head of Household filing status if you are providing over one-half the cost to maintain your home and have your qualifying child as a dependent.
You can only claim you fiancé as a dependent and the other children as dependents if they have lived in your home for the entire year, you have provided over one-half of their support and none of them had gross income of $5,050 or more in 2024, under the Qualifying Relative rules.
To be a Qualifying Relative -
1. The person cannot be your qualifying child or the qualifying child of any other taxpayer. A child is not the qualifying child of any other taxpayer if the child's parent (or any other person for whom the child is defined as a qualifying child) is not required to file an income tax return or files an income tax return only to get a refund on income tax withheld.
2. The person either (a) must be related to you or (b) must live with you all year as a member of your household.
3. The person's gross income for the year must be less than $5,050 (social security does not count) in 2024
4. You must provide more than half of the person's total support for the year.
5. The person must be a U.S. citizen or a U.S., Canada, or Mexico resident for some part of the year.
6. The person must not file a joint return with their spouse with the following exception -
You can claim a person as a dependent who files a joint return if that person and that person’s spouse file the joint return only to claim a refund of income tax withheld or estimated tax paid.
If any of the children are your own biological children, then you can file as HOH. Understand, though, that filing as head of household has nothing at all to do with home ownership.

If you qualify as Head of Household, when you enter your marital status (single or married filing separately) into My Info, and then enter your qualifying dependent, TurboTax will offer HOH as your filing status.
We cannot say whether you can claim your GF as a dependent--you have not mentioned whether she had any income for the year. If she had $5050 of her own income (not counting any Social Security) you cannot claim her as a dependent. If she had less than $5050 of income, then you may be able to claim her for the $500 credit for other dependents. The children who are not your own bio-children can only be claimed for the $500 credit for other dependents--not for child tax credit or earned income credit, nor for childcare credit.

It is very hard for a lot of people to use itemized deductions now that the standard deduction is so much higher. Your home ownership may not have any effect on your tax due or refund, especially if you purchased the house late in the year.
Standard Deduction
Your itemized deductions have to be more than your standard deduction before you will see a change in your tax owed or tax refund. The deductions you enter do not necessarily count “dollar for dollar;” many of them are subject to meeting tough thresholds—medical expenses, for example, must meet a threshold that is pretty hard to reach. The software program uses all the IRS rules that apply to the expenses you enter, and it tells you if you have enough to use your itemized deductions or if using the standard deduction is more advantageous for you. Under the new tax laws, some deductions have been capped—there is a $10,000 limit to the itemized deductions for state, local, property and sales taxes.

Home Ownership
There is not a first time home buyers credit on a Federal return. That ended in 2010. If your state has such as credit, you will be able to enter it when you prepare your state return.
Buying a home is not a guarantee of a big refund. Your deductions for homeownership combined with your other deductions (if any) must exceed your standard deduction to change your tax due or refund. If you purchased your home late in the year, you do not even have a full year of home
ownership deductions.
Your closing costs on your new home are not deductible except for prepaid interest, prepaid property tax or loan origination fees. There are no deductions for appraisal, inspections, title searches, settlement fees. etc.
Your down payment is not deductible.
Your homeowners insurance for fire, hazard, flood, etc. is not deductible for your own home.
Home improvements, repairs, maintenance, etc. for your own home are not deductible.
Homeowners Association (HOA) fees for your own home are not deductible.
Go to Federal> Deductions and Credits> Your Home to enter mortgage interest, property taxes, and loan origination fees (“points”) that you paid in 2024 You should have a 1098 from your mortgage lender that shows this information. Lenders send these in January/early February.
