I have check stubs from 2 employers in Nevada. They are the end of the year amounts. Can we use the totals to file!

As stated in the Answer below, your employers have until the end of January to provide you with a W-2.
Your pay stubs probably do NOT have the information that is on your W-2.  The IRS will have a copy of the W-2 and compares your tax data with the data they have received from your W-2.  If your return has incorrect tax data the IRS will either reject your tax return outright or will hold the tax return for several weeks or months to investigate.

Summary of the info at that excellent link:
-There is a BIG risk when filing without an actual W-2
-You can not actually file before Jan 23, 2017
-You cannot get a refund before Feb 2, 2017
-If you are getting a refundable credit ( money from the IRS in addition to your withholding), you cannot get a refund before Feb 27, 2017

Your employers have until the end of January to provide you a W-2.  Make sure that they have your current address.  

The IRS receives the W-2 from employers and checks the data you enter on your return to the data that they have in their systems.  The IRS will not be accepting any type of tax return until January 23.
