My employer incorrectly deducted some FICA tax amount from my paychecks for tax year 2020. They refused to refund me the FICA tax directly, but sent me an official letter to attach with my Form 843 to send to IRS. I sent the documents in March 2021, and then sent again in August physically from the IRS office, but I haven't received the refund yet.
1) Is there any way I can claim that refund during tax filing for tax year 2021?
2) Do you know how much time it takes to process the refund? What if I change my address in the meantime?

No, you can't claim the refund on your 2021 tax return.
According the IRS, these forms are usually processed in three to four months. That being said, the IRS has admitted they have about 24 millions pieces of unopened mail from last year.
If you change your address, you should let the IRS know as soon as possible. You can change you address by filing a tax return with your new address (if the timing is right) or by filing Form 8822.
