However, what you CAN do is file Married Filing Separately...for "now". You're required to file your return by mid April
Once your wife gets her ITIN, "then" file an amended return as Married Filing Jointly.
Rule of thumb: You've got three years to file/amend a return if YOU are getting money back. If you owe the government, they have until the end of time for you to file.
