You cannot get EIC for more than three dependents even if you have more than three.

Having 4 dependents doesn't make me ineligible for EIC. It's capped out at 3 dependents. It still wouldn't explain the discrepancy that I'm over income guidelines when I'm not. I also don't exceed the investment limit.
Did not say that having four dependents affects eligibility -- just pointing out that (contrary to what some users hope for) that you can only get EIC for up to three dependents. And....you say that your income was less than $68,675?
When you used the interactive EIC assistant from the IRS site, what did it show?
