You can only deduct property taxes you paid in 2016 on your 2016 tax return.  Property tax you paid in 2017 will go on your 2017 tax return next year.

This is my first time paying taxes outside of escrow and I was unable to pay in 2016.  So if I pay 2017's taxes in 2017, then I'll list both?

Yes you will.  Property taxes can only be claimed for the year in which they were paid.
