To be able to answer your question adequately we will need to know what part of the Local and State sales tax is preset.
In the online versions you are asked to enter your total sales tax rate and the income is derived from what you have entered into the program.
In the desktop software you would enter your state and your total sales tax rate. The income comes from the return.

Last year we could enter our actual sales taxed. This year the program inserts a number that is very unreasonable. I have not found a way to override the entry.

You have the option in all TurboTax versions to enter your receipts.
In TurboTax Online versions.
1. Click "Deductions & Credits"
2. Scroll down to "Things you own"
3. Show More
4. Find "Sales taxes"
5. Start/revisit
6. "Try sales tax deduction anyway"
7. You have option next to enter everything or use the "easy guide" and enter the big purchases (or whatever you want to enter) plus the sales tax rate for you location.
In TurboTax Desktop versions
1. Click "Deductions & Credits"
2. Scroll down to "Estimates and other taxes paid"
3. Find "Sales Taxes"
4. Start or Revisit
5. Continue
6. You have option next to enter everything or use the "easy guide" and enter the big purchases (or whatever you want to enter) plus the sales tax rate for you location.
