I do volunteer work as a graphic designer for a non profit organization. I put into the organization 60 hours a month. I am wondering if that time is tax deductible and how would I file that.

Unfortunately, no. That is not deductible at all. You can not deduct the value of your time. See IRS Pub. 526, at this link:
