You don't.  You can't take a charitable deduction for your time, just the cost of the materials (and a small mileage deduction, if applicable).

It doesn't offer me an option for Asphalt Sealant , so is there a specific category I need to file it under ?

Pick whatever you like.  As long as you have a receipt and can show it was used for charitable purposes, you'll be fine.
